This recipe will refuel your body with energy and iron!
The creamy green soup is ideal for 4 people.
- 1 Swede
- 3 Parsnips
- 1 bag (200 g) of spinach
- 3 tablespoons of soya yogurt
- 1 tablespoon of olive oil
- 1 tablespoon of honey
- 4 leaves of bok choi (chinese cabbage)
How to make it:
Remove the skin of swede and parsnips and chop them in small pieces.
Boil them and add salt. When they are almost ready, boil the spinach.
In the meanwhile steam the leaves of bok choi for few seconds.
When swede, parsnips and spinach are all well cooked, remove the water from the pot with parsnips and swede, and add the spinach and their water into this one (spinach water is rich in iron!).
Mash everything together using a food processor. Add yogurt, olive oil and honey and mix them well.
Your soup is ready!
Fill your plate and decorate with a bok choi leaf!
