A recipe from Mali: sweet potato stew

I found an interesting book about recipes from around the world and I have been fascinated by a recipe from Mali. As usual, I changed it a little bit, depending on things I had or I hadn’t at home. This sweet potato stew is extremely rich in taste. I really liked it.

This recipe could serve 4 people.

Ingredients for the stew:

Sunflower or olive oil

Salt

750 g sweet potatoes

150 g white cabbage

1 tablespoon cayenne pepper

1 tablespoon paprika

fresh ginger

garlic

1 onion

1 chopped tomatoes can

300 ml pineapple juice (I used a mix of pineapple and coconut)

1 tablespoon of peanut butter

Ingredients for the garnish: 

2 carrots

1 banana

Lime juice

coriander

How to prepare it: 

Put the oil in a pan and heat it. Chop onion, garlic and ginger and stir-fry them into the oil. Add sweet potatoes chopped in cubes, cabbage, salt, cayenne pepper and paprika and stir it well. Add chopped tomatoes and 300 ml of pineapple juice, cover the pan and simmer until the potatoes and the cabbage are soft. Finally, add the peanut butter and stir the stew.

To garnish your stew grate two carrots, slice the banana into little pieces and add a bit of lime juice. In the original recipe, you can also grate some raw beetroot. Add some coriander leaves and your plate is ready. You can serve it with rice if you wish.
