Divine stuffed sweet potatoes


A new recipe here for you. I felt incredibly inspired and wanted to cook something easy to prepare and tasty! I was impressed by the result (look at the photo!…and once you try it, I expect few comments!)

So, here we are!!!!!!

With the following ingredients, I served two people (myself and my special guest ;)):

  • 3 sweet potatoes
  • olive oil
  • 1 shallot onion
  • 2 carrots
  • 1 courgette
  • 1 teaspoon of paprika
  • salt
  • coriander
  • balsamic dressing

How to prepare it: 

Wash the sweet potatoes and cut them in half.  Make some small cuts on the surface of the potato, so that it will present some gaps to be filled, once cooked.


Put the potatoes in a pre-heated oven and wait until they are cooked!

While the potatoes are in the oven, prepare the filling.  Chop the shallot into tiny pieces and fry it with olive oil.


Grate the courgette!


Grate the courgette and the carrots and add them to the shallot. Add salt, one teaspoon of paprika and let them cook until they are soft.

Once the potatoes are ready, fill them with your courgette and carrot mix, add fresh coriander and a bit of balsamic dressing.

I found it delicious (or divine, as I emphasised in the title), but you have to judge now!
